Ian Cole is head chef at The White Horse in Balsall Common, where he is serving up traditional pub food with a modern twist. Twenty-nine-year-old Ian was previously the sous chef at Solihull's Metro Bar and Grill. We asked him a few questions.

Twenty-nine-year-old Ian was previously the sous chef at Solihull's Metro Bar and Grill. We asked him a few questions about his menu, his cooking style and how he relaxes once out of the kitchen.
What is your favourite dish to cook?
Pork fillet wrapped in pancetta with sage, Colcannon mash
And grain mustard sauce
And to eat?
One of our great steaks or alternatively anything Thai
Which chefs do you admire?
Marco Pierre White, Paul Rankin, Jamie Oliver, Hugh Fernley Whittingstall

When I was 14
To help my mom who was holding down two jobs!

What's your approach to food and the whole dining experience?
Freshest ingredients, kept simple, wholesome and relaxed!
What is the most important meal you've ever cooked?
It's a clich but every meal is important.
Do you use local produce and local suppliers?
As much as possible - our local suppliers are real characters and care more than most people think about what they are doing.
What local products do you value most?
Our local Warwickshire turkeys!
What is your favourite food to cook with?
Fresh fish and shellfish from around the shores of the UK.
What's the best bit of advice you've ever received?
Lead from the front and always carry a pen!
And the best you've ever given?
Don't guess - ask!
How often do you change your menu?
Every three months
Do you have any favourites that you will always include no matter what changes you make?
If we took off our fish pie with cheddar mash or our steak, Guiness and mushroom pudding - there would be a customer revolt!
Why should people visit The White Horse?
Good food with no pretentions, value for money and service with a smile in a relaxed atmosphere, and the private dining area which seats up to 80 which is great for corporate entertaining and private parties.
What is your other favourite Warwickshire restaurant?
There are many good restaurants in this area with some great hardworking chefs producing great food, I wouldn't like to single one out.
Ambitions for the future.
To own two or three venues of my own- when the time is right.
