Pepper, chilli and cream cheese mini Yorkshires - using Mini Yorkshires

- 1 red pepper
100g cream cheese
2 tbsp sweet chilli sauce
A squeeze of lime juice
18 Aunt Bessie Mini Yorkshire Puddings
Sprigs of parsley
A great snack which would be perfect for any jubilee party.
Preheat the grill. Cut the pepper into quarters, remove the stalk and any seeds, then cut a thin slice off the top of each quarter. Rest each, skin-side up, on a baking sheet. Place under the grill and cook until the skin has turned black. Put in a bowl, cover, and set aside for 10-15 minutes.
Meanwhile, mix together the cream cheese, chilli sauce and lime juice in a bowl.
When the pepper quarters have cooled, peel off the skin, then finely chop the flesh.
Preheat the oven to 200°C/180°C fan oven/gas mark 6. Put the Mini Yorkshires on a baking sheet and bake in the oven for 4 minutes. Divide the cream cheese mixture evenly among the Yorkshires. Top with the chopped pepper and a sprig of parsley and serve immediately.
