Posh pub food, seasonal produce, daily homemade bread and ice-cream

What is your favourite dish to cook?

Anything braised or cooked slowly

Rabbit

Fergus Henderson and Marco Pierre White




Why did you start cooking?

Back in 1992 I couldn't get a job doing what I really wanted to at the time and my brother and granddad were both chefs, so I sort of fell into it.

Where did you train?

Jonathan's Hotel and Restaurant, Birmingham

What's your approach to food and the whole dining experience?

Fresh is most definitely best and the experience has to make people feel special

What is the most important meal you've ever cooked?

All of them!

Do you use local produce and local suppliers?

We always use local suppliers and as much as we possibly can, we use local produce

What local products do you value most?

Asparagus, when it's in season there's nothing better

What is your favourite food to cook with?

Fish

What's the best bit of advice you've ever received?

Always follow the five Ps - Prior Preparation Prevents Poor Performance

How often do you change your menu?

Quarterly, with the seasons.

Do you have any favourites that you will always include no matter what changes you make?

Fish and Chips
